Dr Jason Tye-Din - MBBS, PhD, FRACP

Jason Tye-Din is a gastroenterologist and coeliac disease specialist. He is Head of the Coeliac Research Lab at the Walter and Eliza Hall Institute and chairs the Medical Advisory Committee of Coeliac Australia. His research focusses on understanding the immune mechanisms for why gluten is toxic in order to develop better tests and treatments for people with coeliac disease. In addition to clinical care of patients, he is a strong advocate for raising coeliac disease awareness in the general community and medical professionals.  read more...


Dr David Moore - MBBS, FRACP

David Moore is a highly respected peadiatric gastroenterologist and is Medical Head of the Gastroenterology Unit at the Womens and Childrens Hospital in Adelaide.  David has been a full time consultant at the hospital since 1985 - working at the WCH in Adelaide and The Hospital For Sick Children in Toronto Canada. His department at the WCH has 30 staff including nursing, medical, technical, administration and research staff and his current research interests include IBD, eosinophillic oesophagitis, upper GI motility disorders.

Stephanie Gaskell - BND, IOC Diploma In Sports Nutrition, Accredited Practising Dietitian, Accredited Nutritionist, Accredited Sports Dietitian

Stephanie Gaskell, is a well-qualified dietitian with a special interest in gastrointestinal nutrition and sports nutrition. She has many years’ experience and sound knowledge working in the area of Irritable Bowel Syndrome and the low FODMAP™ diet, fructose malabsorption and lactose intolerance. She also has a special interest in coeliac disease, inflammatory bowel disease and other gastrointestinal conditions. Kate Crocker

Mother of three Kate Crocker established the blog Gluten-free Lunchboxes after struggling to find nutritious and easy lunchbox ideas for her Coeliac daughter. A former lawyer, Kate is a home cook who has turned her hand to recipe development and freelance writing. In February 2015, Kate launched her first e-book, Gluten-free Lunchboxes Cookbook, containing more than 60 gluten-free and nut-free recipes. Laura Cassai

Most Australians first discovered Laura Cassai’s passion for food in her role as runner-up in the 2014 series of MasterChef, but in reality Laura proudly boasts a rich Italian heritage that destined her to enjoy a culinary love affair from the moment she was born.

The former Health Science Student is now turning her dreams of becoming a chef into a reality, working in the kitchen of Adelaide CBD’s trendy eatery, Restaurant Orana.

It is no wonder that cooking is in Laura’s blood – with one of her earliest memories helping to mix pasta dough. “I developed a passion for food under the watchful and patient eyes of my nonna Maria and nonna Rosa, and it was their influence that helped to spark my desire to make a career out of working with quality food,” Laura says.

Adding to her knowledge of the Italian tradition and pasta culture, she lived with her family in Tuscany for two years, when she was aged six to eight.

Laura’s first cookbook is due for release in mid-2015 and she is now a regular at food events and cooking demonstrations at major shopping centres, showing people the versatility of pasta and how to use quality ingredients to create home-style cooking that offers a modern twist.

“As a San Remo ambassador I want to show people how to easily combine fresh and seasonal ingredients with quality pasta, to create meals that are perfect for busy couples, working parents, large family gathering, or a dinner party to remember.”

Adam Swanson

Adelaide born Adam Swanson is the owner and Executive Chef of Zucca Greek Mezze, at Holdfast Shores in Glenelg. At the tender age of 17, Adam realised he had an uncompromised fascination and passion for food. He invested 7 years of training with Majeros restaurant, but always knew he was destined for bigger and more inspiring dreams. By his mid twenties, Adam had become the owner of his own restaurant! Now, with 17 years of experience, his devoted love affair with food has become a personal and professional success!

People who know Adam describe him as an ‘old soul’. His inspiration comes from the much loved traditional home style cooking which was a major part of his upbringing. “I spent my free time in my family’s cheese making business, and countless hours falling in love with the flavours and smells from my grandma’s kitchen”

Adam’s achievements are a testament to his devoted work and love for food. His first restaurant Zucca Greek Mezze was established in late 2003. It had only been open for one year when it won the ‘Best Mediterranean Greek Restaurant’ award. It went on to win this award for three consecutive years and as a result Zucca was entered into the hall of fame by the Restaurant and Catering Association of South Australia. Zucca restaurant also won the association’s ‘Best Greek Restaurant’ category award in 2009, 2010, 2012 and more recently in 2014. In 2010, it won the ‘National Best Greek Restaurant’ award by the Restaurant and Catering Industry’s National Awards for Excellence. Adam also was a founding owner and Executive Chef at Esca, also at Holdfast Shores until February of 2010. Esca accumulated multiple awards including Best New Restaurant (2005) and Best European Restaurant (2006) in the South Australian Restaurant and Catering Association Awards. In 2015 Adam Swanson, was announced as Young Achiever of the Year by Restaurant & Catering Australia.

Extending his passion for food, Adam is also a regular chef on TEN’s Ready Steady Cook, Everyday Gourmet, Good Chef, Bad Chef and Seven’s Out of the Blue and is the ambassador for pasta maker San Remo.

Lisa White 

Lisa White is the creator and producer of Alternative Chef Kitchen.  She is a qualified Naturopath with a background in medical research and a mother of two young children.  She is passionate about helping people find options with their diet.  She runs a clinic in Adelaide, South Australia where she helps people with food intolerance, utilises plant based diets and natural fertility to optimise their health.  She holds a Bachelor of Science Degree with Honours and Advanced Diplomas in Naturopathy, Nutrition and Herbal Medicine.  She is a trained teacher in Natural Fertility Education.  Lisa is a full member of The Natural Herbalists Association of Australia (NHAA). read more...

 

 

 

Sabine DeVuono

Sabine DeVuono has been creating and selling gourmet gluten free delights from her Just GF Cafe at Hindmarsh for many years and now she's moved on to her true passion of teaching others how to create gluten free gourmet goodies for themselves.  Sabine has just launched 'Sabines Gluten Free Cooking School' located at 2/140 Marion Road, West Richmond, Adelaide where she has equipped new premises to demonstrate and teach others the joys of gluten free baking and pasta making.  Sabine still sells her gourmet GF products at the Adelaide Farmers Market each Sunday and then devotes the rest of her time to teaching.

Courtney Roulston

Courtney was a finalist on series two of MasterChef. Courtney says “Growing up the youngest of six children has meant that good food has always been an important part of my life. My parents did not have a lot of money, but that did not mean we missed out on eating well as they taught me the importance of being resourceful. Raised on a farm in western Sydney with our own cow to milk, large vegetable garden to care for and many holidays spent catching our own seafood from the ocean has formed the foundation for my food philosophy today: Fresh, Seasonal, Clean, Simple and the knowledge that meals taste better shared with good company. Not bound by any traditions, my cooking is a representation of the melting pot that our country has become, with all the influences from other countries that have made their way to Australia.

MasterChef series two is without a doubt the most exciting food adventure I have been involved in. Since finishing as a finalist, I have been blessed to have worked in many aspects of the food industry, including running my own catering company for corporate and private events, recipe development for The Biggest Loser Club and Blackmores, Cooking demonstrations for Coles, Harvey Norman and food and wine shows, Catering weekly and cooking classes with Sydney Swans AFL, currently working on my own cookbook and appearing on a weekly cooking segment on Channel 9`s Morning show.”

Michael Weldon

Michael  made it to the final two of MasterChef in 2011 and was only narrowly beaten in the final. A food lover from a very young age, Michael’s recipes kept evolving and growing as he did. The more he experienced, more he loved food. From his love of eating his passion for cooking was born. From there his life has been one crazy culinary roller-coaster.

Since finishing MasterChef Michael has been very busy working with many different organisations ranging from cooking at schools to cooking at corporate retreats. In October 2011 he moved to Melbourne to work for MasterChef judge Gary Mehigan at Fenix Restaurant. This was a culinary scholarship he received as a prize for finishing second. After a furious three months of blood, sweat and tears in Melbourne he has headed back home to Adelaide where he is writing recipes for a few South Australian companies.

Now back in Adelaide Michael has started a catering company and is also about to open a diner serving some fun food and drinks. With his end goal still being a restaurant where he can show off the wonderful produce his native state has to offer, Michael is learning more and more every day and getting closer to his prize.
